Light and Airy Orange Cake

    A delicious orange cake with an incomparably light texture. You can use three (23cm) round cake tins instead, if desired. Adjust baking time as needed.

    Serves: 14 

    • 320g cake flour
    • 300g caster sugar
    • 1 tablespoon baking powder
    • 1 teaspoon salt
    • 5 egg yolks
    • 120ml vegetable oil
    • 180ml orange juice
    • 1 tablespoon orange zest
    • 1 teaspoon vanilla extract
    • 225ml egg whites
    • 1/2 teaspoon cream of tartar

    1. Preheat oven to 170 C / Gas 3. Wash a 25cm tube cake tin in hot soapy water to ensure it is totally grease free.
    2. Sift flour, sugar, baking powder and salt together into bowl. Make a well in centre. Put egg yolks, oil, orange juice, orange zest and vanilla into well. Set aside. Don't beat yet.
    3. In a large bowl, beat egg whites and cream of tartar in mixing bowl until very stiff. Set aside.
    4. Using same beaters, beat egg yolk-flour mixture until smooth. Gently fold 1/4 at a time into egg whites. Pour cake mixture into ungreased tube tin.
    5. Bake in oven for 60 to 70 minutes, until an inserted wooden skewer comes out clean. Invert tin until cake has cooled. Remove from tin. Serve plain or ice with Orange Icing.

    Made this cake last week....delicious! My nephews loves it especially with the icing on top!....its quite a large cake but it was soon polished off! Will definitely make again  -  02 Jul 2012
