    About this recipe: These lovely orange muffins are topped with a buttery brown sugar mixture before baking, making the tops extra delicious, with a nice crunch.

    Serves: 12 

    • 250g plain flour
    • 2 teaspoons baking powder
    • 1/4 teaspoon bicarbonate of soda
    • 1 teaspoon salt
    • 100g caster sugar
    • 1 tablespoon grated orange zest
    • 160ml orange juice
    • 110g butter, melted
    • 2 eggs
    • 60g ground walnuts (optional)
    • 1 tablespoon melted butter
    • 4 tablespoons dark brown soft sugar
    • 1/2 teaspoon ground cinnamon

    1. Combine flour, baking powder, bicarbonate of soda, salt, caster sugar and grated orange zest. Stir in orange juice, 110g melted butter, eggs and ground walnuts.
    2. Pour into 12 muffin cups.
    3. Blend 1 tablespoon melted butter, 4 tablespoons dark brown soft sugar, 1/2 teaspoon cinnamon and sprinkle on top of each muffin. Bake in a preheated 180 C / Gas 4 oven for 20-25 minutes. Serve hot.

    I put too much butter in the topping and it was runny so just put some on each muffin and mixed it in slightly. They turned out lovely! I didnt get a crunchy topping but instead had a yummy cinnamon filling swirled around inside the muffins! I will try the crunchy topping next time but still great! - 09 Jun 2013
