450g dates, pitted and chopped
250ml boiling water
1 teaspoon bicarbonate of soda
200g caster sugar
1 teaspoon vanilla extract
200g plain flour
1 teaspoon baking powder
120g chopped walnuts

Preheat oven to 180 C / Gas 4. Lightly grease a 22x33cm tin. In a saucepan, combine dates, boiling water and bicarb. Let stand while mixing the cake mixture.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour, baking powder and chopped walnuts. Stir in the date mixture. Pour cake mixture into prepared tin.
Bake in the preheated oven for 50 to 60 minutes, or until a skewer inserted into the centre of the cake comes out clean. Allow to cool.
