Quick basil Parmesan pasta for one

    Just because your dining alone doesn't mean you shouldn't enjoy a delicious home-cooked meal! This is a quick and easy pasta dish for one.

    Serves: 1 

    • 60g vermicelli pasta
    • 30g butter
    • 3 tablespoons chopped onion
    • 1 clove garlic, minced
    • 150ml double cream
    • 4 tablespoons grated Parmesan cheese
    • 4 tablespoons chopped fresh basil
    • salt and ground black pepper to taste

    1. Bring a large pan of salted water to the boil. Add the pasta and cook for 8 to 10 minutes or until al dente. Once done, set aside 110ml of the pasta water, then drain the pasta.
    2. While the pasta is cooking, melt the butter in a saucepan over medium heat. Stir in the onion, and cook for 3 minutes, then stir in the garlic, and continue cooking until the onion has softened and turned translucent, 1 to 2 minutes more.
    3. Pour in the double cream, and stir in the Parmesan cheese, basil, salt and pepper. Bring to a simmer, then reduce heat to medium-low, and simmer for 2 minutes. Dilute with the reserved pasta water if the sauce is too thick for your taste. Pour the sauce over the pasta to serve.

    Very easy & quick to prepare pasta dish. I found 150ml double cream far too rich for 1 person so I only use 100ml & I also hard some jumbo prawns to the mix, very indulgent & tasty  -  25 Apr 2015


    This dish was AWESOME! It seriously tasted like something from Olive Garden. The only thing I did different was that I added a small handful of mozzerella cheese to the sauce and I didnt use any of the pasta water.     WOW! My family really loved this. I needed this for 6 and it converted very easily. I wanted to add chicken so I just cut chicken breasts into bite size pieces seasoned with salt and peper and cooked them with the onions and garlic. I also had some really fresh tomatoes so I chopped them into small pieces and added them to the top of the dish after it was on the plate. This made a wonderful addition.
