175g (6 oz) uncooked quinoa
450ml (16 fl oz) vegetable stock
4 cloves garlic, chopped
handful chopped fresh parsley
2 sprigs thyme, stem removed
1/4 teaspoon salt
1 small onion, finely chopped
dash fresh lemon juice (optional)

Melt butter in a saucepan over medium heat. Add the quinoa and toast, stirring occasionally, until lightly browned, about 5 minutes. Stir in stock, and bring to the boil. Reduce to a simmer, cover, and cook for 15 minutes, or until quinoa is tender.
In a bowl, mix quinoa together with garlic, parsley, thyme, salt and onion. Sprinkle with lemon juice, and serve.
I made this last night but tweaked it a little. Since I didn't fancy eating raw garlic and raw onion I added them during the cooking process and it was delicious. I just had the leftovers for breakfast! - 08 Mar 2014
