About this recipe: Quinoa is a great alternative to rice - it's lighter, tastes nutty and cooks in about half the time. In this recipe it's tossed with onion, garlic and fresh herbs to make a quick and easy side.


Serves: 4 

  • good knob butter
  • 175g (6 oz) uncooked quinoa
  • 450ml (16 fl oz) vegetable stock
  • 4 cloves garlic, chopped
  • handful chopped fresh parsley
  • 2 sprigs thyme, stem removed
  • 1/4 teaspoon salt
  • 1 small onion, finely chopped
  • dash fresh lemon juice (optional)

Prep:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Melt butter in a saucepan over medium heat. Add the quinoa and toast, stirring occasionally, until lightly browned, about 5 minutes. Stir in stock, and bring to the boil. Reduce to a simmer, cover, and cook for 15 minutes, or until quinoa is tender.
  2. In a bowl, mix quinoa together with garlic, parsley, thyme, salt and onion. Sprinkle with lemon juice, and serve.

I made this last night but tweaked it a little. Since I didn't fancy eating raw garlic and raw onion I added them during the cooking process and it was delicious. I just had the leftovers for breakfast! - 08 Mar 2014
