    About this recipe: If you ever run out of eggs and need a substitute....try using mayonnaise! This recipe is formulated for cupcakes or fairy buns, so it is not suitable for a cake. Top with buttercream icing or whipped cream.

    Makes: 12 buns

    • 200g plain flour
    • 1 1/2 teaspoons bicarbonate of soda
    • 2 tablespoons cocoa powder
    • 180g mayonnaise
    • 200g caster sugar
    • 235ml warm water
    • 1 teaspoon vanilla extract

    1. Preheat oven to 180 C / Gas 4. Lin a bun tray with 12 paper cases. Sift flour, bicarbonate of soda and cocoa powder together; set aside.
    2. Whisk mayo, caster sugar, water and vanilla together until thoroughly mixed. Add flour mixture slowly and beat at medium speed using electric beaters for 2 minutes. Spoon evenly into prepared bun cases.
    3. Bake in preheated oven for 15 to 25 minutes.
