Fried bananas with rum and chocolate sauce

    I actually got this from a friend, and then changed it a bit. Very easy, and it looks fancy. Don't use bananas that are over ripe - you need them to keep their shape. The chcolate suce is good for other desserts too.

    Serves: 4 

    • For the chocolate sauce
    • 120ml double cream
    • 1 tablespoon butter
    • 2 tablespoons caster sugar
    • 100g dark chocolate, chopped up
    • For the bananas
    • 1 tablespoon butter
    • 1 tablespoon caster sugar or brown sugar
    • 4 bananas, peeled and halved lengthways
    • 80ml rum
    • To serve
    • whipped cream

    1. To make the chocolate sauce: In a small saucepan, combine cream, butter and sugar over medium heat and bring to the boil. Remove from heat and stir in chopped chocolate until smooth. Set aside.
    2. In large frying pan melt 1 tablespoon butter over medium heat. Sprinkle 1 tablespoon sugar evenly over surface of pan and cook until it begins to turn golden. Place bananas cut side down in pan and pour rum over bananas. Continue to cook, basting with sauce, until bananas begin to soften.
    3. To serve, place two warm banana slices on a plate, spoon a little rum sauce over the top, drizzle with chocolate sauce and top with whipped cream.

    Very good with the following changes. I used brown sugar and cinamon to saute the bananas, saved a little shaved chocolate for garnish on whipped cream. Sprinkled some toasted slivered almonds on top. A definte hit.  -  13 Apr 2004  (Review from Allrecipes US | Canada)


    This recipe is great, however following the recipe made the banana's too mushed. I will try cooking the rum with the butter and sugar first, until the alcohol cooks off, then put the bananas in for about 2-3 minutes. I would agree about using 1/2 cup for whipped cream.
