Slow cooker baked potatoes

    Instead of having the oven on in the summer - make your baked potatoes in the slow cooker.

    Serves: 4 

    • 4 baking potatoes, well scrubbed and completely dry
    • 1 tablespoon extra virgin olive oil
    • 1 pinch coarse salt, to taste
    • 4 pieces of aluminium foil

    1. Prick the potatoes with a fork several times, then rub potatoes with olive oil, sprinkle with salt and wrap tightly in foil. Place the potatoes into a slow cooker, cover, and cook on High for 4 1/2 to 5 hours, or on Low for 7 1/2 to 8 hours until tender.

    Would not have thought to do jacket spuds in the slow cooker so was pleased with the idea. Put mine on before I went to work and it was nice to come home to a quick meal for the family, just added some salad. Thanks.  -  25 Sep 2014
