Slow Cooker Bananas Foster

    This is a take on a New Orleans dessert....slices of banana are cooked down in a rich, buttery rum sauce with chopped nuts and coocnut. All you need is ice cream to complete this easy slow cooker dessert.

    Serves: 4 

    • 4 bananas, peeled and sliced
    • 4 tablespoons butter, melted
    • 220g dark brown soft sugar
    • 4 tablespoons rum
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon ground cinnamon
    • 30g walnuts, chopped
    • 30g desiccated coconut

    1. Layer sliced bananas in the bottom of a slow cooker.
    2. Combine butter, dark brown soft sugar, rum, vanilla and cinnamon in a small bowl; pour over bananas.
    3. Cover and cook on Low for 2 hours. Top bananas with walnuts and coconut during the last 30 minutes of cooking.

    I'll definitely be making this again but i'd recommend cutting down the quantity, sauce to ice cream ratio a tad high. Reckon this could have been split between 6 or 7 people not 4. But damned tasty all the same  -  28 Feb 2016

    This is not good and I'll tell you why. The banana's in Bananas Foster are suppose to stay somewhat firm and not turn to mush. They shouldn't turn brown. The caramel sauce is really good though, so that alone gets the two stars.  -  11 Jun 2008  (Review from Allrecipes US | Canada)
