Broccoli and chicken pasta

    An easy chicken pasta dish which calls for chicken breasts, spaghetti, garlic and broccoli - all ingredients that you probably already have in your cupboards and fridge/freezer!

    Ingredients
    Serves: 8 

    • 3 skinless, boneless chicken breast fillets
    • 450g spaghetti
    • 450g fresh or frozen broccoli florets
    • 3 cloves garlic, minced
    • 5 tablespoons olive oil
    • salt to taste
    • ground black pepper to taste
    • 2 tablespoons grated Parmesan cheese

    Method
    Prep:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Cook spaghetti according to package directions. Drain well.
    2. While the pasta is cooking, sprinkle chicken breasts lightly with salt and pepper. Grill or pan fry until no longer pink inside. Once cooked, cut into cubes.
    3. Cook broccoli and drain well.
    4. Combine minced garlic with olive oil. Toss pasta with chicken, broccoli, and garlic/oil combination. Season with salt and pepper to taste. Sprinkle with grated Parmesan cheese.

    Cooked this last night. I added a chopped onion and chicken stock but we really enjoyed this dish. Definitely one to do again and I might add more veggies next time - maybe some pepper and mushrooms. I had no parmesan but it was still good - I imagine it is much better with the cheese aswell  -  24 Feb 2017

    I HAVE MADE THIS FOR YRS I DO IT A LITTLE DIFFERENT I SAUTE THE CHICKEN IN GARLIC AND OLIVE OIL SEASON CHICKEN HEAVILY ADD THE BROCCOLI AND SEASON WITH SALT PEPPER GARLIC AND ONION POWDER. THEN TOSS THE SPAGHETTI INTO THE CHICKEN AND BROCCOLI MIXTURE IT IS SOOOOOO GOOD !!  -  01 Oct 2009  (Review from Allrecipes US | Canada)

    This dish was tasty! I did add sauteed mushrooms to it which made it even better! I have 2 boys, 4 & 6 and my 6 year old gave it a thumbs up! Plus, my 4 year old is very picky & he ate it also! Very good :-)  -  16 Mar 2002  (Review from Allrecipes US | Canada)
