About this recipe:It's great fun to see peoples reaction when they find out these chocolate chip biscuits are packed with grated courgette. It doesn't stop them from eating them all.
150g caster sugar
1/2 teaspoon vanilla extract
180g grated courgette
200g plain flour
1/2 teaspoon bicarbonate of soda
1 teaspoon ground cinnamon
80g instant porridge oats
335g dark chocolate chips

Preheat oven to 180 C / Gas 4. Lightly grease or line 2 baking trays.
In a medium bowl, cream butter and sugar until fluffy. Stir in the egg and vanilla, mix well, then stir in the shredded courgette. Sift together the flour, bicarbonate of soda and cinnamon; mix into the courgette mixture. Finally, stir in the oats, granola and chocolate chips.
Drop spoonfuls onto baking tray. Leave at least 5 cms between each biscuit. Bake for 10 to 12 minutes in the preheated oven. The cookies will stay soft and moist because of the courgette.
