Cheesy Chicken and Broccoli Pasta Bake

About this recipe: This is a recipe I make all the time for my family. They love it, especially when there's a lot of cheese. Suits me because they are eating their veggies without noticing!


Serves: 8 

  • 450g pasta
  • 1 tablespoon olive oil
  • 3 boneless skinless chicken breast fillets, chopped
  • 1 pinch salt and pepper to taste
  • 1 (700g) jar pasta sauce with mushrooms
  • 225g tenderstem broccoli or broccoli rabe, trimmed and sliced
  • 225g grated mozzarella cheese
  • 120g grated Cheddar cheese

  1. Bring a large pot of lightly salted water to a boil, and cook pasta for 8 to 10 minutes. Drain, and set aside.
  2. Heat the olive oil in a frying pan over medium heat. Season the chicken with salt and pepper, and cook in the frying pan for 20 minutes, or until cooked through.
  3. Preheat oven to 180 C / Gas 4.
  4. Mix the cooked pasta, cooked chicken, pasta sauce, broccoli and mozzarella cheese in a large casserole or baking dish. Top with Cheddar cheese.
  5. Bake 25 minutes in the preheated oven, until bubbly and lightly brown.
