Dad's Favourite Chocolate Chip Cookies

    I created this recipe for my father. It contains lots of different chocolates and nuts. Thanks Dad for sending me to culinary school! This one is just for you!

    Makes: 48 biscuits

    • 225g butter
    • 220g dark brown soft sugar
    • 200g caster sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 310g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 120g white chocolate chips
    • 160g milk chocolate chips
    • 120g dark chocolate chips
    • 40g chopped walnuts
    • 35g chopped pecans
    • 30g chopped almonds

    1. Preheat the oven to 180 C / Gas 4.
    2. In a medium bowl, cream together the butter, brown sugar and caster sugar. Mix in the eggs and vanilla. Combine the flour, bicarbonate of soda, baking powder and salt; add to butter mixture and stir until just blended. With a large wooden spoon, stir in all the chocolate chips. Stir in the walnuts, pecans and almonds. Drop heaped teaspoonfuls onto ungreased baking trays.
    3. Bake for 10 to 12 minutes in the preheated oven. Allow cookies to cool on the baking tray placing on wire cooling rack.

    O.K.!!!!!!!!!!!!!! There are still more cookies left to bake but I couldn't wait to tell everyone how awesome these really are!!!!!!!! At first I thought they were so thick and cake-like but as they cooled they flatened down. Resulting in a perfect light & crispy cookie with a very moist and chewy inside.Absolutely awesome!!
