Makes: 12 muffins
4 tablespoons vegetable oil
1 lemon, zested and juiced
125g plain flour
100g wholemeal flour
1/2 teaspoon salt
1 teaspoon baking powder
100g caster sugar
4 tablespoons dark brown sugar
150g fresh strawberries, chopped

Preheat oven to 190 degrees C / Gas mark 5. Line a muffin tin with paper liners.
In a bowl, lightly beat together the oil, milk, egg and lemon juice. In a separate bowl, mix the lemon zest, flour, salt, baking powder, caster sugar and brown sugar. Mix strawberries into the flour mixture. Stir in the oil mixture just until moist. Fill muffin cups about 3/4 full with the batter.
Bake 25 minutes in the preheated oven, or until a skewer inserted in the centre of a muffin comes out clean. Allow to cool 10 minutes before removing from the muffin tin.
Loved this recipe. I made a few substitutions as I didn't have whole flour so just used all plain flour. Also no dark sugar so just added more granulated sugar ...oh and no caster sugar so used granulated. The smell and flavour was lovely. My husband loved them. The mixture was a bit thick. I think next time I might add a bit more milk and baking powder so they rise a bit more and are less dense. The flavour combination is fab. Good way to use up lemons and strawberries.
