Summertime fruit salad

    I make this easy dessert throughout the summer and use whatever fruit is on offer at the time.

    Serves: 12 

    • 445g seedless watermelon
    • 1 large peach, pitted and cut into small cubes
    • 1 large nectarine, pitted and cut into small cubes
    • 1 plum, pitted and cut into small cubes
    • 145g fresh blueberries
    • 80g seedless grapes, halved
    • 35g desiccated coconut
    • 1 teaspoon ground cinnamon
    • whipped cream (optional)

    1. Gently toss the fruit together in a large bowl. Sprinkle the coconut and cinnamon over and lightly stir to mix. Cover the bowl and chill in fridge at least 1 hour before serving. Top with whipped cream, if desired.

    Wow! Nothing screams summer like a delicious fruit salad. This is definitely bursting with vibrant colors and flavors! I toasted my cococut and topped with a dollop of fat free greek vanilla vs. non-dairy whipped topping.
