Pineapple walnut cake

    My granny would throw this cake together in a flash. You probably have all the ingredients in your cupboards already. It's quick, really moist and so delicious!

    Makes: 1 cake

    • 400g caster sugar
    • 250g plain flour
    • 2 eggs
    • 60g chopped walnuts
    • 2 teaspoons bicarbonate of soda
    • 2 teaspoons vanilla extract
    • 1 large (567g) tin crushed pineapple with juice
    • For the icing
    • 1 (200g) tub cream cheese
    • 220g icing sugar
    • 60g chopped walnuts
    • 110g butter
    • 1 teaspoon vanilla extract

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 9 x 17.5cm cake tin.
    2. In a large bowl, mix flour, sugar, 60g walnuts and bicarbonate of soda. Add eggs, pineapple and 2 teaspoons vanilla extract. Beat until smooth and pour into cake tin.
    3. Bake for 40 to 50 minutes.
    4. For the icing: In a large bowl, cream butter or margarine, cream cheese, 1 teaspoon vanilla and icing sugar until light and fluffy. Fold in walnuts. Spread on hot cake.
