    About this recipe: Any white fish such as cod or haddock works well with this Indian marinade. Best if you can marinade it for at least 4 hours, then pop it under your grill and it's done.

    Ingredients
    Serves: 6 

    • 5 tablespoons vinegar
    • 4 cloves garlic, crushed
    • 1 tablespoon chopped fresh ginger
    • 1/2 teaspoon salt
    • 1 tablespoon cayenne pepper
    • 1 tablespoon ground coriander
    • 1 tablespoon ground cumin
    • 120ml vegetable oil
    • 2 pounds thick white fish fillets, (such as haddock or cod) cut into large chunks

    Method

    1. Blend the vinegar, garlic, ginger, salt, cayenne, coriander, cumin and oil in a blender until you have a thick paste. Brush the fish chunks with the mixture to coat evenly and place in a shallow dish; pour the remaining marinade over the fish. Allow to marinate in refrigerator at least 4 hours.
    2. Preheat the oven grill. Arrange the marinated fish in an oven-proof dish, reserving the marinade.
    3. Grill the fish on the oven's centre rack for 10 minutes; turn and brush with reserved marinade. Continue cooking until the fish flakes easily with a fork, about 7 minutes more. Serve hot.

    Lovely recipe but doesn't needs as much cayenne as stated the fish is so delicate that the quantity blocks the flavour of the fish. Will try it again  -  13 Oct 2011
