    About this recipe: An all in one chicken stew, quick and easy to prepare. A really hearty stew for the winter months, perfect to come home to after a busy day at work.

    Makes: 4 large servings

    • 2 carrots, peeled and diced
    • 2 sweet potatoes, peeled and diced
    • 2 potatoes, peeled and diced
    • 1 onion, chopped
    • 2 leeks, sliced
    • 2 to 3 chicken breasts
    • 200g mushrooms, halved if large
    • 250ml chicken stock, reduced salt if possible
    • 1 teaspoon whole grain mustard
    • 2 teaspoons mixed herbs
    • 2 teaspoons plain flour
    • 2 to 3 garlic cloves, finely chopped
    • 2 bay leaves
    • 1/4 bottle white wine

    1. Place carrots, sweet potatoes, potatoes and onions in the bottom of a slow cooker. Layer leeks, chicken breasts and mushrooms on top.
    2. Prepare chicken stock in a jug, mix in mustard, herbs, flour and garlic, and then add to slow cooker.
    3. Finally add the bay leaves and white wine. Cook on Low for 8 to 10 hours, or until chicken is no longer pink at the centre.
    4. I tend to give a good stir up before serving to break up the chicken. Serve with crusty bread.

    Disappointing, on low for 9hrs chicken was cooked but root veg wasn't. Had to tip into pan. very watery added cornflour to thicken and tomato puree to cheer it up a bit, cooked for another 30mins. If you are thinking of giving it a go half the mixed herbs and double the flour! Wont be making it again never have any luck using slow cooker!  -  26 Jan 2013

    I don't usually like the taste of the meals that come out of my slow cooker, so I don't often use it. I tried this recipe as I had some white wine and chicken to use up, I didn't expect to like it. But infact after leaving it for 9 hours it was really nice! It restored my faith in slow cookers :-) I put some fresh parsley with mine too.  -  04 Jun 2013
