Slow Cooker Honey Ginger Chicken Thighs

Chicken thighs cooked in the slow cooker with a sweet honey, ginger, soy and pineapple sauce.

Ingredients

1 tablespoon vegetable oil
10 boneless, skinless chicken thighs
175g (6 oz) honey
175ml (6 fl oz) light soy sauce
3 tablespoons ketchup
2 cloves garlic, crushed
1 tablespoon minced fresh root ginger
1 (435g) tin pineapple pieces, drained with juice reserved
2 tablespoons cornflour
4 tablespoons water

Preparation method

1. Heat oil in a frying pan over medium heat, and brown chicken thighs on all sides.
2. Pour honey, soy sauce, ketchup, garlic, ginger and reserved pineapple juice into a slow cooker and mix well. Place thighs in the slow cooker and turn to coat with mixture.
3. Cover, and cook 4 hours on High. Stir in pineapple during the final 20 minutes of cooking.
4. Mix the cornflour and water in a small bowl. Remove thighs from slow cooker. Blend the cornflour mixture into remaining sauce in the slow cooker to thicken. Serve sauce over the chicken.

  • Tweak: cookychick Altered ingredient amounts:

    I used chicken breasts pieces and reduced amount of soy and added half teaspoon of chilli powder and chinese five spice (as recommended) and added chilli noodles and beansprouts when I put the pineapple in half hour before end time. Absolutely delicious!

    Tweak: Rmg12 Altered ingredient amounts:

    we only had dark soy sauce so used 4 and 1/2 tbsp of it. I also added a little more ginger and a pinch of five spice and a pinch of chilli powder. We also used set honey but it worked out the same. We also used chicked breast instead of thighs but it worked well anyway. Delicious.

    Very nice! Simple to make and tastes as good as it smells! I did wonder about the amount of Soy Sauce (I decided to use the low sodium stuff) and the volume of Honey, so maybe next time I will try reducing those amounts and making it up with a little water.
