Ben's tomato salsa

This is a great summer recipe, a must at all BBQs and picnics. To change it up, try mango or pineapple in place of melon.

Ingredients
Serves: 8
- 225g tomatoes, deseeded
- 225g fresh ripe melon
- 1 red onion, finely chopped
- 1 jalapeno chilli, deseeded and minced
- 1 large bunch coriander, roughly chopped
- 2 limes, zested and juiced

- Chop the tomatoes and and melon into the same size chunks, about 5mm.
- Put in a large bowl with the red onion, jalapeno, coriander and lime zest and juice and mix well with hands.
- Leave to stand for 30 minutes to allow all the flavours to merge.
