    About this recipe: This apple spice muffin recipe is a delicious flavoursome muffin with an apple taste. This recipe calls for apple sauce instead of whole apples; use either homemade or shop-bought apple sauce.

    Ingredients
    Makes: 8 muffins

    • 110g butter, room temperature
    • 135g caster sugar
    • 2 eggs
    • 1/2 teaspoon ground nutmeg
    • 1/2 tablespoon ground allspice
    • 2 teaspoons baking powder
    • 2 teaspoons bicarbonate of soda
    • 235ml apple sauce
    • 190g plain flour
    • 1 teaspoon dark brown soft sugar
    • 1 teaspoon ground cinnamon

    Method
    Prep:20min  ›  Cook:20min  ›  Extra time:10min cooling  ›  Ready in:50min 

    1. Preheat the oven to 180 C / Gas 4.
    2. In a large bowl mix together the butter and the sugar until the mixture is creamy. Beat in eggs and mix well.
    3. Next add the nutmeg, allspice, baking powder and the bicarbonate of soda. Mix in well. Then add the apple sauce and the plain flour mix it in all in and make sure it is light and fluffy. Put the mixture into muffin cases.
    4. Mix in bowl the brown sugar and cinnamon and sprinkle over the muffins.
    5. Bake the muffins in the preheated oven for 20 minutes.

    Other ideas

    If you don't like the idea of the brown sugar and the cinnamon on top of the muffins then you can ice them instead. Mix 2 tablespoons of water and 120g of icing sugar in a bowl and mixture until smooth and glossy. Drizzle the icing on to the muffins when they are cool.

    Couldn't really taste Apple as the cinnamon dominated the flavour however the muffins are very moist and I will try making them again but use fresh apples - 24 Nov 2015
