Homemade almond paste

About this recipe: Almond paste is similar to marzipan. It's not as sweet and works well in Christmas stollen and any other recipe that calls for marzipan. This one is quick and easy to make.

Ingredients

Makes: 650 g

  • 400g ground almonds
  • 200g icing sugar
  • 2 egg whites
  • 1 pinch grated lemon zest
  • 1/2 teaspoon almond extract

Method

  1. Stir together ground almonds, icing sugar, egg whites, lemon zest and almond extract. Mix well. Press together, wrap and chill until needed.

I used this great base to do a subtle raw sweet vegan paste. Almond powder, Agave syrup around 100ml, and the zest of a lemon: Best almond paste, without the added Almond essence, as it can be over powering. The zest of the lemon replace the essence in a lovely way. Great paste for dipping in chocolate as really not sweet - 17 Dec 2013
