    About this recipe: A wonderful comforting soup, tres easy to make and goes down a treat with a bacon butty! Serve with crispy bacon in a crusty roll - Heaven! :o)

    Ingredients
    Serves: 4 

    • 1 butternut squash
    • 2 small sweet potatoes
    • 3 shallots
    • 2 garlic cloves
    • 1 knob butter
    • 1 teaspoon ground cumin
    • water
    • 1 tablespoon chicken stock
    • salt and pepper to taste

    Method
    Prep:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Peel and chunkily chop all veggies.
    2. Add butter to a large pan on low heat. Add all veggies and cumin. Add a little water and let it stew in own juices for 10 minutes.
    3. Add chicken stock and rest of water, bring to boil then simmer for 20 minutes.
    4. Blend with hand blender until smooth - add cream for extra luxury - and add salt and pepper to taste.
