No bake Christmas cake

    Really fruity and nutty easy Christmas cake. A must for everyone. You can choose any size mug or cup for measuring all of the ingredients, so you can easily make a larger or smaller cake.

    Serves: 30 

    • 1 cup raisins
    • 2 cups dates
    • 2 cups mixed candied fruit
    • 4 cups chopped mixed nuts
    • 2 cups very finely crushed digestive biscuits
    • 3/4 cup evaporated milk
    • 2 cups marshmallows
    • 1 cup 70% dark chocolate, melted (optional)

    1. Mix raisins, dates, candied fruit and chopped nuts in a large bowl.
    2. Grind digestive biscuits in a food processor until very finely crushed, and measure 2 cups.
    3. In a saucepan bring evaporated milk to a boil, add marshmallows and stir until thoroughly combined and marshmallows are melted.
    4. Stir the biscuits into the fruit and nut mix. Add the marshmallow mix.
    5. With wet hands mix all ingredients together until well mixed. Rinse hands.
    6. Pour into a greasproofpaper-lined round springform tin. Wet hands and press down well.
    7. Refrigerate for 2 days until set.
    8. When set, cover with melted chocolate if using.
