Smoked trout on a bed of watercress

    A healthy lunch or starter and very easy to prepare. The lovely taste of smoked trout with the bed of watercress is delicious and can be prepared by even the most inexperienced cook.

    Serves: 2 

    • 2 smoked trout fillets
    • 1 garlic clove, chopped
    • butter
    • 450g (1 lb) fresh chestnut mushrooms, sliced
    • 1 packet watercress
    • 1 small tin chopped herb tomatoes
    • 1 small onion
    • 2 teaspoons chilli powder
    • 1 lemon

    1. Preheat the oven to 180 C / Gas 4.
    2. Wrap smoked trout in foil with half the garlic clove and a knob of butter.
    3. Prepare and slice mushrooms and wrap in foil with the remaining chopped garlic and a knob of butter. Place the smoked trout and mushrooms on a baking tray.
    4. Bake in the preheated oven for 20 minutes.
    5. While the fish and mushrooms are in oven prepare 2 plates with the bed of watercress. Spread out the watercress evenly on the plates.
    6. Drizzle over 2 dessertspoons of the chopped tomatoes. Thinly slice the onion and evenly place over the bed of watercress on both plates. Evenly sprinkle chilli powder over.
    7. Place smoked trout in the centre of each plate. Squeeze some lemon over the top if desired and sit down and enjoy.
