In a mixing bowl add the mince, half of the onion, salt and pepper and mix well with your hands and really squidge it up. On a chopping board take the mince mixture and flatten out on the board. Take a presentation ring and cut out 4 thin burgers. (see pic)
Meanwhile add the remaining onion to a mug and add a little water. Microwave on high for 1 minute, drain through a tea strainer and set aside (this will slightly blanch the onion).
When ready to cook, heat a non stick fry pan (no need to add oil) Add the burgers and fry until cooked through or grill if preferred.
While the burgers are cooking, prepare the rest. Slice 2 of the burger buns in half. With the remaining bun you want to cut each half in half again. Discard the seeded top and discard the base end. Per person you want to have 3 slices of bread (you know like the Big Mac). Use a good knife as it can easily go wrong (or like me have spare buns to hand).
Lightly toast each bun slice (6 in total). Once the burgers are cooked you can assemble. On the base bun spread a squirt of Thousand Island dressing, add the lettuce followed by a burger and a cheese slice. Add the middle bun, add a burger, cheese slice, pickles and onion. Dollop with sauce and top off with the bun top.
That's it. Sounds like a lot of work but it is surprisingly quick and not as guilt conscious like the real thing.
