The ol' doll's stew

    My mother's Irish stew recipe, made with traditional mutton. Don't be afraid to add lots of black pepper.

    Serves: 4 

    • 700g breast of mutton
    • 900g potatoes
    • 4 onions, sliced
    • salt and freshly ground black pepper
    • 500ml water

    1. Cut meat into tidy slices. Wash and peel potatoes, cutting large potatoes in two.
    2. Arrange the meat and onions in layers at the base of a saucepan, seasoning each layer with salt and pepper. Then add water followed by the potatoes.
    3. Cover the saucepan and bring to boil. Simmer gently for 1 1/2 hours.


    The mutton can be substituted with four gigot chops.
