About this recipe: A quick tasty snack that I experimented with just to be different. The first time I cooked these I tried without the balti powder and with balti powder and the balti ones were much tastier. Also I have listed the unhealthy option but have listed the healthier alternative, which is my own preference, at the bottom of the recipe. Oven baking items with breadcrumbs can make them seem quite dry; that is why I have listed the pan fry option first. Excellent with served with dips.


Makes: 12 goujons

  • 2 teaspoons balti masala curry powder
  • 1 teaspoon caster sugar
  • 200g plain flour
  • 1 egg, beaten
  • 1 pinch black pepper
  • 1/2 teaspoon salt
  • 600g chicken breast fillet, cut into mini size goujons
  • 200g fresh breadcrumbs
  • oil for frying

  1. Put the balti powder, sugar and flour in a bowl.
  2. Beat the egg in a bowl and add the pepper and salt.
  3. Take strips of chicken and dip in the egg mixture, then in the flour and then in breadcrumbs.
  4. Pan fry in hot oil until cooked through.

Make it healthier

For a healthier option omit the flour and add the balti powder to the breadcrumbs and the sugar to the egg mix. Dip the chicken in the egg mix and roll in the breadcrumbs and then put on a baking tray into a preheated oven at 200 C / Gas 6 for around 15 minutes or until chicken is no longer pink at the centre.
