Smoky bacon and potato soup

    Another one of the mother's classics the whole family will love. Serve with freshly baked Irish brown bread.

    Serves: 8 

    • 30g butter
    • 2 tablespoons oil
    • 150g smoked streaky bacon, finely chopped
    • 300g finely chopped onion
    • 500g potatoes, peeled and finely chopped
    • 500ml chicken stock
    • salt
    • fresh black pepper
    • 600ml milk
    • 1 tablespoon chopped parsley

    1. Melt butter and oil in a large saucepan. Add bacon and cook for a few minutes. Add onions. Cover and sweat on a gentle heat until the latter become soft but not coloured. Add stock and leave to simmer while you prepare the potatoes.
    2. Add potatoes to saucepan and stir until the mix becomes sticky and thick. Season with pepper and a little salt.
    3. Keep stirring and add milk slowly. Boil until the potatoes are soft. Garnish with parsley, taste and serve.


    Add a little more milk or stock if too thick.

    We loved this recipe.I did use dried parsley, since that is all I had. Then topped with croutons. Served this soup with grilled cheese sandwiches. Thank you for the recipe, IrishGael.  -  25 Mar 2012
