Christmas crumble

    This is a great way to use up any leftover sweet mincemeat after you've made enough mince pies to see you through to the new year! Adding tinned fruit gives it more of a saucy consistency.

    Serves: 8 

    • For the crumble topping
    • 175g plain flour
    • 75g ground almonds
    • 120g butter
    • 75g caster sugar
    • For the fruit base
    • 400g sweet mincemeat
    • 1 tin pears or peaches, drained and sliced
    • For garnish: flaked almonds

    1. Preheat the oven to 200 degrees C.
    2. Rub the butter into the flour until it feels like fine sand. Mix in ground almonds and sugar.
    3. Spoon the mincemeat onto the bottom of a heat-proof casserole dish. Top with sliced fruit. Finally, sprinkle crumble mixture evenly on top of the fruit. If you like, you can top with flaked or chopped almonds.
    4. Bake for 20-25 minutes until golden on top.
