Apple cake with the apples blended

    This cake is similar to an apple cake but instead the apples are blended in it. Tastes really nice and is also really healthy.

    Serves: 4 

    • 56g (2oz) margarine
    • 56g (2oz) caster sugar
    • 2 eggs
    • 113g (4oz) self-raising flour
    • 140g (5oz) finely chopped Granny Smith apples
    • 2 1/2 tablespoons water

    Prep:15min  ›  Cook:30min  ›  Extra time:30min cooling  ›  Ready in:1hr15min 

    1. Preheat the oven to 180 C / Gas 4.
    2. Cream the margarine and sugar in a large mixing bowl. Add both eggs to the mixture.
    3. Fold half the flour into the mixture.
    4. Put the apples and water in a blender and blend for a few minutes.
    5. Add the apple mixture to the cake mixture, and fold in the remaining flour. Pour into a greased baking tin.
    6. Bake in the preheated oven for 30 minutes then take out and leave to cool for 30 minutes.

    Very easy to make, even the kids could do it. I made the recipe into individual cakes instead of one large one. I used cooking apples from my parents garden, softened and sweetened them first and put them into the cake cases before the mixture. Only took 12mins to cook and they tasted wonderful  -  04 Nov 2012


    I'm afraid i'm not very good at baking so i followed this recipe to the letter. All went well, i was looking forward to offering a piece of it to my police officer daughter at the end of her shift. I got the 'cake' out of the oven exactly on time and had a good laugh. It was flat, tasted a bit like a gooey yorkshire pudding (i can't make those either) with apple in it. Please can someone tell me what i did wrong. Was i supposed to beat the ingredients? It didn't say i had to on the recipe but maybe i needed more air in it. Help needed here please!  -  02 Dec 2016
