Spaghetti with Pecorino and Thyme

About this recipe:
Spaghetti, garlic, Pecorino, thyme and fresh tomatoes come together in a flash for a tasty midweek supper.
1/2 (500g) packet spaghetti
3 tablespoons olive oil
1 clove garlic, minced
1 tomato, diced
2 tablespoons chopped fresh thyme
salt and freshly ground black pepper to taste
50g (2 oz) freshly grated Pecorino Romano cheese
- Cook spaghetti according to packet instructions; drain.
- In large bowl, combine olive oil, garlic, tomato, thyme, salt and pepper. Toss with hot pasta. Serve topped with cheese.
Feel free to substitute Parmesan or any other hard Italian cheese for the Pecorino.
Good simple side dish.
