    About this recipe: Spaghetti, garlic, Pecorino, thyme and fresh tomatoes come together in a flash for a tasty midweek supper.

    Ingredients
    Serves: 4 

    • 1/2 (500g) packet spaghetti
    • 3 tablespoons olive oil
    • 1 clove garlic, minced
    • 1 tomato, diced
    • 2 tablespoons chopped fresh thyme
    • salt and freshly ground black pepper to taste
    • 50g (2 oz) freshly grated Pecorino Romano cheese

    Method

    1. Cook spaghetti according to packet instructions; drain.
    2. In large bowl, combine olive oil, garlic, tomato, thyme, salt and pepper. Toss with hot pasta. Serve topped with cheese.

    Tip:

    Feel free to substitute Parmesan or any other hard Italian cheese for the Pecorino.
