My easy vegetable curry

About this recipe: Mild vegetable curry. An abundance of vegetables are sauteed together with curry powder, and simmered in a tomato broth.

Ingredients

Serves: 4 

  • 28g (1oz) butter
  • 2 sticks celery, chopped
  • 2 carrots, chopped
  • 1/2 red or green pepper, chopped
  • 1/2 onion, chopped
  • 1/2 turnip, chopped
  • 1/2 cauliflower, broken into florets
  • 1 garlic clove, crushed
  • 1 red chilli, chopped
  • 1 green chilli, chopped
  • 1 handful button mushrooms, chopped
  • 1/2 bunch broccoli, broken into florets
  • 1/2 teaspoon curry powder
  • 600ml (1pt) water
  • 1 tablespoon tomato paste
  • 1 tablespoon chopped tomatoes
  • 1 handful freshly cut coriander
  • 56g (2oz) plain flour
  • 1 handful baby spinach

Method

Prep:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Preheat hob about medium heat. Put saucepan on the heat and put the butter in the saucepan until melted. Once melted, put in the vegetables (except for tomatoes and spinach) and the curry powder in the saucepan and cook until transparent.
  2. Pour in the water and add the tomato paste, chopped tomatoes, coriander and flour until thick. Once thick, add the spinach and stir it in. Take off the heat to serve.
