Simply delicious ginger biscuits

    This recipe was given to me by my mother-in-law. I loved walking into her house when they were cooking. The smell was wonderful! I was thrilled when she gave me the recipe as no other ginger biscuits were ever as good. They are so simple to make too. I hope you enjoy them as much as me.

    Makes: 40 biscuits

    • 340g (12oz) self-raising flour
    • 2 teaspoons ground ginger
    • 1/2 teaspoon ground cinnamon
    • 1 teaspoon baking powder
    • 1 medium egg
    • 110g (4oz) golden syrup
    • 110g (4oz) margarine or butter
    • 225g (8oz) caster sugar

    1. Preheat the oven to 180 C / Gas 4. Sift the flour into a bowl and add the ginger, cinnamon and baking powder. Beat the egg and add to the bowl. Put this to one side.
    2. Place golden syrup, margarine (or butter) and caster sugar into the saucepan on a low heat to melt ingredients. This only takes a few minutes.
    3. Pour the melted ingredients into the bowl with the other ingredients, mix well and leave to cool for a few minutes.
    4. While your ingredients are cooling prepare a large baking tray. Use greaseproof paper to line the tray.
    5. Roll a teaspoon of mixture into little balls and place onto the greaseproof paper.
    6. Bake in the oven near the top for about 15 minutes. Remove from the oven, and leave on the baking tray for a few minutes before placing on a wire rack to cool.
