Herby bacon rolls

    Delicious for a starter or side. These will have your taste buds tingling. Bacon is fried crisp, enclosing fresh herbs and garlic.

    Serves: 2 

    • 4 slices bacon
    • 2 teaspoons chopped chives
    • 2 teaspoons chopped coriander
    • 2 teaspoons chopped parsley
    • 1 garlic clove
    • other herbs (optional)
    • oil for frying

    1. Lay out slices of bacon. Spoon 1/4 of each herb into the centre of each slice of bacon. Crush the garlic and place half in the centre of the bacon (with the herbs).
    2. Wrap the bacon around the herbs.
    3. Heat oil in a frying pan.
    4. Cook in the frying pan on medium heat until bacon has cooked through.
