About this recipe: 26th January is Australia Day. These bonza, mate! cheesy pastry pinwheels with Vegemite make a fair dinkum pre-dinner snack.

Makes: 36

  • 256g self-raising flour
  • 1 teaspoon mustard powder
  • 1 pinch paprika
  • 1 pinch dried mixed herbs
  • 2 tablespoons butter, at room temperature
  • 170g grated cheese
  • 80ml water
  • Vegemite®

Prep:15min  ›  Cook:12min  ›  Ready in:27min

  1. Preheat the oven to 220 C / Gas 7.
  2. In a large mixing bowl sift in the flour, mustard and paprika. Add the herbs. Using your fingertips rub in the butter. Add the cheese and mix well. Add the water and mix to a dough.
  3. On a lightly floured surface knead the pastry until it is a firm dough.
  4. Roll out pastry into a thin rectangle. Spread the Vegemite all over (be careful to spread lightly as Vegemite is quite strong in taste).
  5. Roll up into a long coil. Cut with a sharp knife into pinwheels 5mm thick. Place onto greased baking trays.
  6. Bake for 10 to 14 minutes. Using a spatula, carefully remove to cool on a wire rack.

For Ondulado : 2 cups would equate to 300 grams. 'tab' is an abbreviation for 'tablespoon'. Hope this helps - 09 May 2012

This is a comment rather than a review, as I was looking forward to this but unfortunately I have no idea what measurement is meant by "cup" or "tab". These do not exist in the Uk or Spain where I live. If anyone knows the answer, please update with ounces or grams. Thanks - 09 May 2012
