Mix will last 3 days in fridge or can be frozen.

I'm really sorry but this recipe was a total disaster for me. I followed it to the letter and was left with a runny mixture rather than a dough. I still cooked a test cookie which was more like a bun...so I added more flour and was able to get a dough consistency but even when cooked they never turned to cookies. I think it was the egg that did it.. these aren't chewy but soft in the middle like sponge. Feel a bit gutted as I spent a small fortune on the ingredients and they were for a gift tomorrow and I'm known for my good baking! - 25 Oct 2012
