Creamy mushroom and chicken pasta

About this recipe: A rich pasta dish that's very satisfying, using a condensed soup as a base. Serve with a crusty baguette, garlic bread or just baked rolls and a small side salad.

Serves: 4 

  • 25g unsalted butter
  • 1 onion, diced
  • 6 large closed cup mushrooms
  • 2 chicken breast fillets, chopped into bite size pieces
  • 1 can of low fat condensed mushroom soup
  • 50ml water
  • salt and pepper
  • 225g pasta
  • 100ml single cream

  1. Heat the butter in a large saucepan on low-medium and gently fry the onion until soft and translucent. Add the mushrooms and cook for 4 to 5 minutes.
  2. Add chicken to the pan and fry gently until almost cooked through, about 4 minutes. Add the soup, water and plenty of salt and pepper.
  3. Cook the pasta according to packet instructions. Meanwhile, leave the sauce simmering and add the cream 3 minutes before pasta is ready. Taste and if needed, add salt and pepper again.
