Sharon's chicken fried rice

    A quick and easy dish! Can also be made with pasta - both are really tasty. This is a great way to use up leftover rice if you don't have the quick pre-steamed wok rice to hand, and you can adjust the seasonings to taste - add additional veg, if desired.

    Serves: 2 

    • 2 medium chicken breasts
    • salt and pepper to taste
    • oil for frying
    • 3 mixed peppers
    • 250g mushrooms
    • 3 small red onions
    • 250g Uncle Ben's wok rice
    • soy sauce to taste
    • dried chilli flakes to taste

    1. Fry two chicken breasts, and add salt and pepper when frying. Put to 1 side then add peppers, mushrooms, red onions and rice.
    2. Fry for 5 minutes, then add the chicken back in and cook longer for a softer dish. Add a splash of soy sauce and dried chillies.
    3. Cook of for a further 5 minutes then serve.
