Gloria's Tuna and Tomato Pasta

About this recipe: This is a simple pasta dish because it's all cooked in the one pot. It's a recipe from a friend of ours but has become a firm family favourite in our house. I usually use macaroni pasta but you can use any type you have on hand.

Serves: 4 

  • 4 tablespoons vegetable oil
  • 2 medium onions, finely chopped
  • 3 cloves of garlic, crushed
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon sugar
  • 3 rounded tablespoons tomato puree
  • 2 (400g) tins plum or chopped tomatoes
  • 600ml water
  • 2 (185g) tins tuna in brine, drained
  • 250g macaroni or penne pasta
  • 1 bay leaf

  1. Heat the vegetable oil in a medium-large saucepan over medium heat.
  2. Add chopped onions and cook until softened, about 5 minutes. Add crushed garlic, salt, pepper, sugar and tomato puree; stir well. Add tins of tomatoes and water; bring to the boil. Add pasta and bay leaf, and cook until pasta is cooked, about 8 minutes.
  3. Remove bay leaf and stir in tuna. Serve hot with garlic bread.
