    About this recipe: The classic accompaniment to a French roast chicken is the green salad with a French dressing. Remember, a green salad can be anything from single cabbage leaves to a mixture of salad greens, such as cucumber, spring onions and watercress.

    Ingredients
    Serves: 4 

    • 1 tablespoon red or white wine vinegar or cider vinegar
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • a good pinch of sugar (optional)
    • any combination of chopped fresh thyme, basil, parsley or marjoram
    • 1 tablespoon olive oil OR groundnut oil

    1. Mix the vinegar with the seasonings, then add the oil. When the dressing thickens, taste to adjust the seasoning. More salt should added if the seasoning is sharp yet oily.
