Super satisfying chicken Caesar salad

    A brilliant recipe for lunch . . . high protein take on a low fat chicken Caesar salad using precooked chicken.

    Serves: 1 

    • 1 sweet baby cos lettuce
    • 1/2 pack Tesco® Make a Meal With Bacon-topped Chicken
    • 30ml Caesar salad dressing
    • 25g croutons
    • 10g Parmesan cheese
    • 1 medium free range egg
    • 1 pinch black pepper

    1. Put a small pan of water on to boil.
    2. Tear lettuce into large pieces.
    3. Slice the Bacon-topped Chicken and mix together with the lettuce and the Caesar salad dressing.
    4. Add croutons and shave Parmesan on top of the salad.
    5. Once the water has boiled, lower to a simmer. Break the egg into a cup and gently pour into the water – avoiding breaking the yolk.
    6. Simmer for about 4 minutes until the white is firm but the yolk still soft.
    7. Drain the egg, place on the salad, grind fresh black pepper on top and serve.
