Mum's Lemon Roast Chicken

    This recipe for lemon roast chicken is very special to me. My mum always made it for Sunday lunch. Putting a whole lemon in the cavity of the chicken really works wonders as the lemon aroma penetrates through every piece of the chicken as well as the house! You'll need 2 lemons - one for juice and one to keep whole.

    Serves: 6 

    • 1 whole medium-sized chicken
    • 1 tsp salt
    • 1 tblsp lemon juice
    • 1 garlic clove, crushed
    • 1 medium sized whole lemon
    • 2 tblsp vegetable oil

    1. Preheat the oven to 200 degrees C /gas mark 6.
    2. Rub outside of chicken with salt and lemon juice and crushed garlic.
    3. Then scrub the whole lemon to make sure it's clean before popping it into the chicken cavity.
    4. Place chicken on a roasting tin or casserole dish and for an hour. After an hour, check the chicken and cook for a further 10 minutes at 22o degrees C /gas mark 7 to crisp up the skin.
    5. Remove from the oven, slice and serve with gravy, potatoes, vegetables and Yorkshire pudding.
