Spicy Baked Sweet Potato Chips

    These are a delicious, healthy alternative to regular chips. Sweet potatoes have more fibre than regular potatoes, too.

    Serves: 4 

    • 6 sweet potatoes, peeled and cut into thin chips
    • 2 tablespoons olive oil
    • salt and freshly ground black pepper to taste
    • 1/2 teaspoon cayenne pepper (optional)

    1. Preheat the oven to 220 C / Gas Mark 7.
    2. In a plastic bag, combine the sweet potatoes, oil, salt, pepper and cayenne pepper. Close and shake the bag until the chips are evenly coated. Spread the chips out in a single layer on two large baking trays. Do not crowd the chips onto one tray.
    3. Bake for 20 minutes, or until crispy and brown on one side. Turn over and cook for another 20 minutes, or until they are all crispy on the outside and tender inside. Cooking time will vary depending on how thick you cut your chips.

    Something else. I bake the first 20 min. on 200, last 15-20 min. on 220. I've dipped these in garlic aioli or just eaten plain. Tip - put a greased sheet of foil on your baking tray - no sticking and no mess.  -  07 Aug 2008


    Good way to get the kids to eat sweet potatoes without frying - full of vitamin A and beta carotene. Also great with steak dinners.  -  07 Aug 2008


    Something else. I lowered the temperature to 200 for the first 30 minutes and turned it up to 220 for the last half of baking.  -  07 Aug 2008
