Chicken with caramelised onions and peppers

    My husband loves this recipe as it has all his favourite ingredients: chicken and red peppers. I cook the onions until brown, it adds a natural sweetness to the dish.

    Serves: 4 

    • 2 large onions, sliced
    • 2 red peppers
    • 1 tablespoon olive oil
    • 4 chicken breasts

    Prep:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Add the onions to a frying pan and cook for 10 minutes over low heat or until brown.
    2. Cut the peppers into thin strips and cook on low heat for 20 minutes, this way the onions will get golden brown.
    3. In another frying pan, heat the olive oil over medium heat and cook the chicken breasts for 15 minutes or until brown.
    4. Serve the chicken breasts on the vegetables.

    Tried this recipe last week & enjoyed it so much that it is on the menu for dinner tonight. A great way to use a glut of red peppers out of the greenhouse! I served it with roasted new potatoes. Thanks for sharing this recipe.  -  03 Sep 2015
