About this recipe: Beer adds a lightness to pancakes but it's important to prepare ahead of time and let the batter rest for 2 hours or so before cooking.


Makes: 30 pancakes

  • 500g plain flour
  • 1 pinch salt
  • 80g caster sugar
  • 6 eggs
  • 500ml milk
  • 500ml lager
  • 60g butter, melted
  • 1 tablespoon rum

Prep:10min  ›  Extra time:2hr resting  ›  Ready in:2hr10min 

  1. Mix the flour, salt, sugar, eggs and milk. Whisk together, then add half of the beer.
  2. Add the melted butter and remaining beer; whisk until smooth. The rum is optional to add at this stage.
  3. Set aside for 2 hours before cooking.
