Easy Carrot Soup

    The perfect way to warm up on a chilly day. This recipe is simple and easy to do - add a tablespoon of creme fraiche before serving, if you like.

    Serves: 6 

    • 1 tablespoon olive oil
    • 1 large onion, finely chopped
    • 5 large carrots, peeled and sliced
    • 500ml water
    • 1 stock cube
    • A bouquet garni (parsley, thyme, bay leaf)

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Add the olive oil and onion to a saucepan and cook over medium heat for 5 minutes, or until tender.
    2. Add the carrots, water and stock cube. Add the bouquet garni to the saucepan. Bring to the boil, then simmer for 20 minutes.
    3. Transfer the soup to a blender or food processor and puree until smooth.

    I like the fact that it has alot of carrot taste, and it's good. The onion aroma is great and I will use that in other recipees with onion. On the second try I added some of my own touches and was very pleased. Try real chicken stock instead of stock cube, add like 1,5 tablespoon of store bought or whatever you think of homemade. Put pieces of lightly fried bacon in it before serving, even a little bit of the fat. And for taste sprinkle some salt on top before serving, rock salt was great. If you put salt in during the cooking process you loose alot of the salt taste and you will use more, therefore loosing more of the other tastes, and it's less healthy. try  -  09 Feb 2016
