1 litre milk
2 tablespoons vanilla extract
50g caster sugar

Pour the rum into a bowl and add the raisins - let them soak in it for about an hour.
Add the milk to a large saucepan and pour in the semolina. Cook for 10 minutes over medium heat, stirring constantly until thick. Remove from heat, add vanilla, sugar and raisins. Don't want to throw away that good rum? Add it, if you like.
Pour into ramekins or a deep dish and allow to cool slightly before serving.
