Spicy Lime Chicken

    This is a slightly spicy lime juice based marinade that adds wonderful flavour to chicken. The breasts marinate in the fridge for about an hour, and then are cooked until moist and crispy brown. Perfect for summer barbecues, but it can be grilled in the oven anytime of the year.

    Serves: 6 

    • 5 tablespoons vegetable oil
    • 2 tablespoons lime juice
    • 1/2 teaspoon grated lime zest
    • 2 cloves crushed garlic
    • 1 1/2 teaspoons fresh oregano
    • 1/4 teaspoon crushed red chillies
    • 1 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 6 skinless, boneless chicken breast fillets

    1. In a shallow glass dish, mix the oil, lime juice, lime zest, garlic, oregano, red chillies, salt and black pepper. Add chicken, and turn to coat. Cover, and marinate in the refrigerator for 1 hour, turning occasionally.
    2. Preheat barbecue for medium-high heat.
    3. Lightly oil the barbecue grate. Drain and discard marinade. Cook chicken for 6 to 8 minutes on each side, or until juices run clear.

    I made a few changes that made this a 5 star recipe for me. I doubled the amount of lime juice and garlic and allowed the chicken to marinate overnight for a flavorful, juicy chicken breast.
