Hubby's Favourite Shepherds Pie

    This shepherds pie is my husband's favourite dinner so I made this version for him on Valentine's day!

    Serves: 4 

    • 3 medium potatoes, peeled
    • 500g leftover lamb or cooked lamb mince
    • 1 large onion, finely chopped
    • 5cm root ginger, finely diced
    • A pinch ground black pepper
    • A knob butter
    • 100ml milk
    • 1 tablespoon oil

    1. Preheat oven to 180 C / Gas 4.
    2. Place the potatoes in a saucepan, cover with water and add a pinch of salt. Bring to the boil and cook for twenty minutes. Drain, mash and add butter and milk, stir and set aside.
    3. Chop the lamb in a blender, it is faster. Cook the onion in a frying pan with a tablespoon of oil on low heat for 5 minutes. Add leftover lamb and ginger, mix well.
    4. Transfer this mixture into a baking dish and cover with mash; bake in preheated oven for about 10 minutes, until golden brown on top.

    Just tried this. Mine turned out bland but I didn't have fresh ginger. I used 1 carrot, beef mince, 1 tsp of ground ginger a tbps of red wine vinegar, and some rosemary (again dried) I could definitely detect the flavour it should have had though! so will try again. I also think my bake dish was too shallow, but otherwise, ginger is a really good flavour to add to this! so thank you for this recipe!  -  27 Nov 2011
